Servings - 4
- 6 medium beets
- 3 Tbls olive oil
- 2 Tbls red wine vinegar
- 2 cloves garlic - crushed
- salt to taste
- Wash beets thoroughly.
- Boil beets until tender (about 40 - 45 minutes)
- Remove skins under cold running water - skins should just slip off
- Slice beets and toss with the olive oil, vinegar, garlic and salt. Serve
